Why use one

1

It stops the steep

Emptying the brewer into the pitcher ends steeping at once. No tea sits on the leaves between rounds.

2

It evens the tea

The first tea out of a brewer is weak and the last is strong. Mixed together, each cup tastes the same.

3

It shows the color

In a glass pitcher you can watch the color deepen and fade from one steep to the next.

Last pour strongest, first pour weakest. The pitcher settles it.

What makes it pour well

选Get one that holds at least as much as your brewer.
选Look for a sharp spout that stops without dribbling.
选For glass, choose heat-resistant borosilicate that handles boiling tea.
选A handle helps. Handleless ones need a flared rim, or they get too hot.

Good to know

What is a fairness pitcher?

A fairness pitcher, or gong dao bei, is a small jug that holds a full steep before it is shared. Every cup gets the same strength, which is how it got the name.

Can I brew gongfu tea without a pitcher?

Yes. Pour straight into the cups, moving back and forth along the row so the strength stays even. Chaozhou brewers call this Guan Gong patrolling the city.

Is a glass or porcelain pitcher better?

Glass is better for beginners because you can see the tea. Porcelain keeps heat longer and looks plainer on the table. Either works for any tea.
