Bamboo steamer

A bamboo steamer stacks over a wok. Its woven lid soaks up steam, so nothing drips.

Steam over your wok

1

Set the water level

Add enough water to touch the bottom rim of the steamer, but not the food. The wet rim also keeps the bamboo from scorching.

2

Line each tier

Use cabbage leaves, parchment with holes or a damp cloth. Leave gaps between pieces, because buns swell and steam needs a way up.

3

Boil first, then load

Bring the water to a full boil before the steamer goes on. Keep the lid closed, and top up with hot water only.

A bamboo lid drinks the steam. A metal lid drips.

Good to know

How do you use a bamboo steamer without a wok?

Set it on a saucepan or stockpot with a rim about the same size. If the pot is narrower, the steamer can perch on top as long as it sits steady.

Do you need to line a bamboo steamer?

Yes, for most foods. Dumplings and buns will stick to bare bamboo and tear. Lining also keeps fish and meat smells out of the wood.

How do you clean a bamboo steamer?

Rinse it in warm water and brush it gently, without soaking. Skip the soap, which the bamboo absorbs. Air-dry it fully before stacking, or mold can grow.
